CBD-Infused Andalusian Summer Gazpacho

A classic Spanish cuisine from the southern region of Andalusia, gazpacho is the ultimate summer dish. A refreshing mix of raw vegetables, this favorite dish of Spain and Portugal is served cold to help combat those hot summer days. Infused with all-natural CBD, this Andalusian dish is sure to make any summer one to remember.

Ingredients
  • 4 large, ripe tomatoes
  • 1 cucumber
  • 1 small red onion
  • 1 medium green or red bell pepper
  • 2 cloves garlic
  • 1 ½ teaspoons kosher salt
  • 2 slices bread (any kind)
  • 1 cup extra-virgin olive oil
  • 2 tablespoons sherry vinegar
  • 2 tablespoons chives
  • Ground black pepper
  • Diamond CBD Unflavored CBD Hemp Oil as desired to dose soup
Directions
  1. Core, peel, or seed (as necessary) tomatoes, cucumbers, red onions, and peppers, and cut into small chunks.
  2. Peel and smash garlic cloves.
  3. Remove bread crusts and tear into small pieces.
  4. Toss tomatoes, cucumber, onion, pepper, garlic, and salt in a bowl, coating thoroughly.
  5. Allow to sit (at room temperature) for 30 minutes.
  6. Drain juice from mixture into another bowl and then add the bread.
  7. Chill drained vegetables in the freezer for about 30 minutes.
  8. Allow vegetables to thaw for 30 minutes before placing them in the bowl with the bread and juices.
  9. In blender, mix vegetables, juice, and bread at high speed. Add olive oil, sherry vinegar, and Diamond CBD Unflavored CBD Hemp Oil as the mixture blends.
  10. Strain using a fine mesh strainer.
  11. Season with salt, pepper, and chives.
Suggestions
Drizzle on extra olive oil and sherry vinegar as desired.
